Sunshine Salad
Sunshine Salad is an moderately easy dinner. Made with 1 (3 oz.) pkg. lemon flavored gelatin, 1 c. boiling water, 1/2 c. cold water, 1 (9 oz.) can crushed pineapple and 1/8 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Dissolve gelatin in boiling water.
Stir in cold water, pineapple, salt and grated carrots (and celery).
Pour into an 8 x 8 x 2-inch pan or a gelatin mold.
Cut in squares or slices and serve on lettuce leaves.
