Sunshine Cake
Sunshine Cake is an moderately easy dinner. Made with 2 1/4 c. self-rising cake flour, 1 1/2 c. sugar, 3/4 c. water or 1/2 c. orange juice and 1/4 c. water, 1/2 c. oil and 5 egg yolks, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Sift flour and sugar; make a well.
Add oil, yolks and liquid; beat well with a spoon.
Beat egg whites with cream of tartar until very stiff.
Fold egg yolk mixture over egg whites.
Gently fold until blended.
Pour into 10-inch tube pan.
Bake in a 325° oven for 50 minutes.
Bake at 350° for 5 to 10 minutes.
Invert; cool.
