Summit Lemon Squares
Summit Lemon Squares is an moderately easy dinner. Made with 2 sticks margarine, softened, 2 c. all-purpose flour, 1/2 c. powdered sugar, 4 eggs, slightly beaten and 2 c. sugar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Mix margarine, flour and 1 cup sugar and press into a 10 x 14-inch pan.
Bake 15 to 20 minutes at 325°.
Mix well the eggs, 1 cup sugar, lemon juice, 1 tablespoon flour, baking powder and pecans.
Pour on top of the pastry.
Bake at 325° for 35 to 40 minutes.
Sprinkle with powdered sugar.
Cool and cut into squares.
