Summertime Squash

Summertime Squash is an moderately easy dinner. Made with 2 lb. squash, sliced, boiled and drained, 1 large onion, chopped fine, 1/4 c. bell pepper, chopped fine, 1 1/2 c. crushed herb croutons and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Boil and drain squash.

Mix onion, bell pepper, soup and sour cream in squash.

Melt margarine and add croutons.

Mix in squash mixture with 1/2 of cheese. Add salt, pepper and garlic powder to taste.

Pour into casserole dish.

Top with remainder of cheese. Melt a little more margarine and toss 1 cup croutons and put on top of cheese.

Bake at 350Β° for 30 to 40 minutes.

(Can be frozen before or after baking.)
