Summer Squash
Summer Squash is an easy dinner. Made with 6 small summer squash, 1/3 c. mayonnaise, 1/3 c. parmesan cheese, 1 small tomato, peeled, diced and drained and 1 small green pepper, diced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook squash until barely tender, cool slightly.
Scoop out centers, leaving a shell.
Mix scooped out squash and mix with remaining ingredients.
Stuff the shells.
Bake at 350Β° until heated.
