Summer Cooler
Summer Cooler is an easy dinner. Made with 1 (4 serving) pkg. jell-o brand gelatin (any flavor), 3/4 c. boiling water, 3/4 c. light corn syrup or 1/2 c. sugar, 1 1/2 c. mashed or pureed fresh fruit (peach and strawberry used here) and 2 egg whites or 1 whole egg, slightly beaten, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Dissolve gelatin in boiling water.
Stir in fruit and corn syrup.
Beat in whisk.
Pour into 13 x 9-inch pan.
Freeze until firm, about 2 hours.
Spoon half the mixture into blender food processor.
Blend at high speed until smooth, but melted, about 30 seconds.
Repeat with other half.
Pour into 9 x
5-inch or 1 1/2 quart container. cover; freeze until firm, 6 hours or overnight. Makes 6 servings.
