Sugar Mountain Chicken Salad
Sugar Mountain Chicken Salad is an moderately easy dinner. Made with 1/2 to 3/4 c. mayonnaise, 1/2 tsp. curry powder, 4 c. coarsely cut up cooked chicken, 1 c. chopped celery and 1/2 (5 oz.) can water chestnuts, sliced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Combine mayonnaise and curry powder.
Set aside. Combine next seven ingredients. Mix enough mayonnaise into chicken mixture until moistened. Slice cantaloupe into 1/2-inch sliced rings. To serve chicken salad, place ring of cantaloupe on lettuce. Heap salad on cantaloupe. Garnish with chunks of pineapple and paprika. Serve with hot bread. Serves 6.
