Sugar-Free Fruit Cake
Sugar-Free Fruit Cake is an moderately easy dinner. Made with 1 c. chopped dates, 1 c. chopped prunes, 1 c. raisins, 1/2 c. margarine and 2 c. water, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Bring to a boil the dates, prunes, raisins, margarine and water.
(You may use 1 cup apple juice plus 1 cup water instead of the 2 cups water.)
Simmer 2 minutes; let cool.
In a separate bowl, mix the flour, soda, salt, cinnamon, beaten eggs, vanilla and nuts.
Add this to the cooled fruit mixture.
Pour into greased and floured 9 x 12-inch pan or a tube pan.
Bake in a preheated 325Β° oven for 40 minutes.
