Stuffed Zucchini
Stuffed Zucchini is an impressive dinner you can prepare in about 1 hour 18 minutes. Made with medium zucchini, c. soft breadcrumbs (about 6 slices), cubed, c. grated parmesan cheese, small onion, minced and . chopped parsley, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Brown sausage.
Wash zucchini; cut off ends.
Do not peel. Cook in boiling, salted water for 5 minutes.
Halve lengthwise and remove pulp with spoon.
Combine pulp, bread crumbs, sausage, cheese, onion, parsley, salt, pepper and eggs.
Fill zucchini shells and top with sauce and Mozzarella cheese.
Bake at 350Β° for 30 minutes.
