Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 2 medium zucchini, 3 c. soft bread crumbs, 1/2 c. regular grated cheese, 1 tsp. salt and 1/8 tsp. pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cut ends off the zucchini.
Cut zucchini lengthwise.
Do not pare the zucchini.
Scoop out pulp.
Cook (boil) pulp, bread crumbs, salt, pepper, onion and eggs for 5 minutes.
Spoon into zucchini shells.
Dot with butter.
Sprinkle on cheese.
Bake at 350Β° for 30 minutes.
