Stuffed Squash
Stuffed Squash is an moderately easy dinner. Made with small squash, onions, cheddar cheese, corn bread crumbs and butter, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Trim stem end on squash.
Boil until almost done.
While boiling, saute onions in butter.
Crumble corn bread crumbs in onions.
Add salt and pepper to taste.
Drain squash; cool slightly.
Cut in half.
Scoop out centers.
Mix squash centers with corn bread mixture.
Place squash halves in pan.
Place thin slice of Cheddar cheese in squash boat; add corn bread mixture. Brown in oven at 375Β°.
Remove, add another slice of cheese on top and broil until cheese melts.
