Stuffed Spaghetti Squash
Stuffed Spaghetti Squash is an moderately easy dinner. Made with 2 spaghetti squash, 2 tbsp. olive oil, 1 c. onion, chopped, 1/2 c. celery, chopped and garlic, minced, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cook squash whole in microwave until fork enters squash easily or cut squash in half (long length) and remove seeds.
Place squash, cut side down, in pan of 1/2-inch of water.
Bake at 350Β° for 50 to 60 minutes or until tender.
Saute the onion, garlic and celery in oil.
Stir in tomatoes, mushrooms, rice, parsley, oregano and pepper.
Stuff the cooked squash and sprinkle with cheese.
Bake until cheese melts.
Serves 6.
