Stuffed Shrimp
Stuffed Shrimp is an moderately easy dinner. Made with 1/4 c. butter, 1 tbsp. finely chopped onion, 1 tbsp. finely chopped green pepper, 1 tsp. finely chopped celery and 6 slices bread, crumbled, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Saute onion, green pepper and celery in butter until tender. Soak bread in milk.
Combine sauteed onion, pepper, celery, bread and crab meat.
Blend thoroughly and add salt, pepper and cayenne. Split raw shrimp almost in half.
Leave tail on shrimp.
Stuff shrimp with crab meat mixture and press halves together.
Dip shrimp in seasoned flour, then in beaten eggs.
(Beat one egg at a time; it may not be necessary to use 3 eggs.)
Roll shrimp in cracker meal and fry in deep, hot fat (about 375Β°) until golden brown.
Serve with desired sauce.
