Stuffed Peppers
Stuffed Peppers is an moderately easy dinner. Made with 4 fresh green peppers (medium-size), 3/4 lb. ground beef, 3/4 c. onions, minced, 1 1/2 c. brown rice, cooked and 1 (14.5 oz.) can italian diced tomatoes, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 350°. Place peppers in microwavable dish, cut side down and cook on High, uncovered, for 4 minutes.
In mixing bowl, combine next 3 ingredients and mix well.
Mix together diced tomatoes, ketchup and Tabasco sauce.
Then add 1/4 cup of this to the ground beef, onion and brown rice mixture.
Divide beef-rice-tomato mixture evenly among green pepper halves.
Then spoon remaining diced tomato mixture over top.
Cover dish tightly with aluminum foil.
Bake 40 to 45 minutes, until beef mixture is 160°.
