Place in large pot; cover with water.

Cover and bring to a boil.

Lower heat and cook slowly 20 to minutes or until tender. Remove halves and cool slightly.

Out pulp with a spoon, leaving firm shell about 1/4-inch thick.

Mash pulp and set aside.
