Stuffed Chicken Quarters
Stuffed Chicken Quarters is an moderately easy dinner. Made with 3 slices white bread, 1 egg, 1/2 c. shredded cheese (2 oz.), 1/8 tsp. pepper and salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Melt butter and cook zucchini until tender, 2 minutes. Stir frequently.
Remove from heat.
Into saucepan, tear bread into small pieces, stir in eggs, cheese, pepper and 1/2 teaspoon salt.
Preheat quarter, with fingers, carefully loosen meat to form a pocket. Spoon stuffing in pocket. Place chicken in 13 x 9-inch baking pan.
Bake 50 minutes until fork-tender.
When ready to serve, brush with honey and sprinkle lightly with salt.
