Stuffed Baked Potatoes
Stuffed Baked Potatoes is an moderately easy dinner. Made with 4 to 6 large baking potatoes, 1 lb. ground chuck, 1 lb. velveeta cheese, cubed, 1 can ro-tel tomatoes with green chilies, diced and 1 pkg. taco seasoning mix, this recipe delivers authentic, satisfying flavors. Grease potatoes and bake for 1 1/2 hours at 350Β° or until done.
Brown hamburger meat and mix with taco seasoning mix according to package directions.
(Be sure meat is drained.)
In a double boiler or microwave, melt Velveeta cheese mixed with Ro-Tel tomatoes.
Stir frequently.
To serve, slice hot potato and lightly fluff.
Layer taco meat, cheese mixture, sour cream, green onions and salt and pepper to taste.
