Rinse strawberries and dry thoroughly with paper towels.
Set berries aside.
Place white chocolate in top of a double boiler; bring water to a boil.
Reduce heat to low; cook until chocolate melts.
Grasp strawberries by the stem and dip into melted chocolate.
Place on a wire rack sprayed with vegetable cooking spray and chill until chocolate is firm.
Serve within 8 hours.
