Steak Quesadillas
Steak Quesadillas is an moderately easy dinner. Made with 8 oz. flank steak, 1/4 c. soy sauce, 1/4 c. water, 4 oz. shredded jack cheese and 1/4 c. diced tomatoes, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Pound steak with a tenderizing mallet.
Marinate 1 hour in soy sauce and water.
Grill until done and slice across the grain in very thin strips.
In a large skillet, lay down one tortilla and spread with half of the cheese, tomatoes, jalapeños and chopped cilantro.
Top with half of the steak and the other tortillas. Cook on stove top until bottom tortilla is toasted.
Flip quesadilla over and cook until other side is toasted and cheese is melted.
Remove from pan; cut into sixths and serve with salsa and sour cream.
Repeat for other quesadillas.
Serves 1 to 2.
