Squaw Corn
Squaw Corn is an moderately easy dinner. Made with 1 (17 oz.) can whole kernel corn, drain and save juice, 8 slices bacon, sliced into small pieces, 1 medium onion, chopped, 1/2 green pepper, chopped and 1 oz. pimento, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cut bacon across strip into 1/4-inch pieces. Chop onion and pepper about the same size. Fry bacon; drain. Discard half of the bacon fat.
Add liquid from corn and chopped vegetables.
Cook over medium-high heat until thick syrup forms on bottom of pan, stirring frequently. Add corn, bacon, pimento, salt, pepper and chiles. Stir to mix and continue cooking until corn is heated through.
