Squash Supreme

Squash Supreme is an moderately easy dinner. Made with 6 or 8 young squash, 1 stick margarine, 1 small onion, chopped fine, 1 small carrot, shredded and 1 (8 oz.) pkg. cornbread stuffing mix, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Boil squash until tender; drain.

Cool and slice.

Melt margarine in a large saucepan. Saute onion and carrots.

Add cornbread stuffing and mix thoroughly to coat crumbs.

Cover bottom of shallow 2-quart baking dish with this mixture, reserving half for top of casserole.

Add sliced squash, salt and pepper. Mix soup and sour cream and pour over squash. Top with remaining cornbread mixture.

Bake at 350Β° for 30 minutes.
