Squash Soufflé
Squash Soufflé is an moderately easy dinner. Made with 4 medium, yellow squash, sliced, 1 medium, chopped onion, salt and pepper to taste, 4 crackers, crushed and 4 tbsp. melted butter, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Steam onion and squash together until tender; drain excess water and mash well.
Add crackers, salt, pepper, butter, beaten egg yolks and cheese; blend well.
Fold in stiffly beaten egg whites.
Pour into baking dish.
