Squash Soufflé

In large mixing bowl, combine squash, butter, brown sugar, salt, pepper and orange peel.
Beat until fluffy.
Add egg yolks; beat well.
Beat egg whites until stiff peaks form.
Carefully fold into squash mixture.
Bake soufflé in 350° oven for 30 minutes to 45 minutes.
Makes 4 to 6 servings.
