Squash Soufflé
Squash Soufflé is an moderately easy dinner. Made with 1 white onion, 1 1/2 lb. yellow squash, cut, 3 slices bread, toasted, 2 eggs and 1 tbsp. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Peel and cut onion.
Cook with cut squash until tender.
Run toasted bread through food chopper with squash and onion.
Mix all ingredients except half the bread crumbs, which are to be browned in 1 tablespoon butter.
Pour into greased baking dish with buttered crumbs on top and bake at 350° about 40 minutes.
Serves 6 to 8.
