Squash Pickles
Squash Pickles is an moderately easy dinner. Made with 8 c. thinly sliced squash, 2 c. thinly sliced onions, 3 c. sugar, 2 c. white vinegar and 2 tsp. celery seed, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine squash and onions in pan.
Sprinkle with salt; let stand 1 hour, then drain (do not rinse).
Mix other ingredients in pan.
Bring to a hard boil.
Add squash and onion; boil 15 to 20 minutes.
Pack in jars.
Seal jars and process in hot bath for 10 minutes.
Yields 3 pints.
