Squash Pancakes
Squash Pancakes is an moderately easy dinner. Made with 2 1/2 c. cooked squash (yellow crookneck), 1/4 c. corn meal (plain), 1/4 c. flour (plain), 1/2 tsp. salt and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Cook unpeeled squash until tender.
Drain and then add all other ingredients.
Mix and then fry in hot oil until brown, turning like a pancake.
(If you like, you may add jalapeΓ±o peppers to mixture before frying.)
