Squash Muffins
Squash Muffins is an moderately easy dinner. Made with 2 lb. squash, 2 eggs, slightly beaten, 1 c. margarine, melted, 1 c. sugar and 3 c. flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Preheat oven to 375Β°.
Measure 2 cups squash.
Combine squash, eggs and margarine, stirring well, then combine sugar, flour, baking powder and salt in a mixing bowl.
Make a well in the center and stir in the squash mixture until moistened.
Spoon into greased muffin tins.
Bake for 20 minutes.
Can be frozen after baking.
