Squash Medley
Squash Medley is an moderately easy dinner. Made with 5 lb. yellow squash, sliced, 1 c. onions, diced, 1 c. fresh tomatoes, diced and drained, 1 c. cubed american cheese and 3/4 c. bread crumbs, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook squash just until tender and drain.
Saute onions in 1 stick of butter.
Take onions out of pan with a slotted spoon and save butter.
Using the butter from the onions, lightly brown the bread crumbs.
Combine squash, onions, tomatoes and cheese in a casserole dish.
Mix gently together.
Top with browned bread crumbs.
Bake at 350Β° for 1/2 hour, or until cheese is bubbly. Serves 6 to 8.
