Squash Medley is an moderately easy dinner. Made with 4 fresh unpeeled squash, thinly sliced, 1/2 green pepper, chopped, 2 ripe tomatoes, chopped, 1 1/2 c. shredded sharp cheese and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. Parboil squash about 3 minutes.
Drain.
Combine remaining ingredients, except for bread crumbs and butter.
Place in baking dish, alternate squash with filling.
