Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 6 c. squash (yellow or zucchini), 1/4 c. chopped onion, 1 can cream of chicken soup, 1 c. sour cream and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saucepan, cook squash and onion in boiling, salted water for minutes.
Drain.
Combine soup, sour cream and carrots in a separate bowl.
Stir in drained squash and onion. Combine stuffing mix with margarine; spread half of stuffing mix in bottom of a 13 x 9-inch baking dish.
Spoon vegetable mixture on top.
Sprinkle remaining stuffing mixture on top. Bake at 350Β° for 25 to 30 minutes.
(Leftovers can be frozen.)
