Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. summer squash (zucchini is great also), 1 small (8 oz.) sour cream, 1 can cream of chicken soup, 1 small pkg. pepperidge farm herb stuffing and 1 medium carrot, grated, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Slice squash and cook until tender.
Drain well and combine with sour cream, chicken soup, carrot, onion and 1/2 of stuffing mix.
Mix remaining half with butter for topping.
Bake at 350Β° for 30 minutes.
