Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. squash, cooked and drained, 1 carrot, grated, 1 onion, chopped, 2 tbsp. pimento, chopped and 1 can cream of chicken soup, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Cook squash; season lightly with salt and pepper.
Add carrot, onion, pimento and soup.
Pour melted margarine over stuffing and mix well.
Add 1/2 stuffing mix to squash and place in buttered casserole.
Cover with remaining stuffing.
Bake at 375Β° for 25 to 30 minutes.
