Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, 1 carrot, finely grated, 1 onion, finely chopped, 1 can creamy chicken-mushroom soup and 1 small jar pimiento, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Boil squash for 5 minutes; drain and chop.
Add remaining ingredients, except stuffing mix and margarine.
Mix stuffing and margarine together.
Layer half the squash mixture in bottom of casserole dish.
Top with half the stuffing and margarine mixture. Repeat layers again.
Bake at 350Β° for 20 to 25 minutes.
