Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 3 c. cooked yellow squash, 3/4 c. chopped onion, 2 heritage eggs, beaten, 1 c. heritage milk and 1 small jalapeño (seeded), chopped, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Drain cooked squash and add margarine, salt and pepper, jalapeño and milk.
Mix and add beaten eggs, onions, cheese and cracker crumbs.
Pour into greased casserole.
Bake uncovered at 375° for about 40 minutes.
Sprinkle with paprika.
Makes 8 servings.
