Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 1 1/2 lb. yellow squash, sliced and parboiled, 1 jar pimento, chopped, 1 small onion, grated, 1 c. (or more) diced celery and 1 c. sour cream, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix stuffing and melted oleo.
Use about 2/3 of it to line the bottom of a casserole.
Mix soup, sour cream, grated onion and carrots.
Stir in remaining vegetables and place over stuffing layer.
Sprinkle remaining stuffing mixture on top.
Bake 50 to 60 minutes at 350Β°.
Serves 12 to 15.
