Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, 3 tsp. butter, 1 c. ritz crackers, 1 c. sharp cheese and 1 small onion, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Chop squash and onion and boil together until tender.
Remove from heat and drain, then stir in salt, pepper, milk, butter and egg; mix well.
Crush crackers.
Grate cheese, then pour into 2 layers.
Start with squash, then cheese and crackers.
Repeat again.
Bake at 350Β° for 20 to 30 minutes.
