Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. squash (zucchini or summer squash), sliced in 1/4-inch slices, 1/2 c. water, 1/2 tsp. salt, 1 c. onions, chopped and 1 c. red or green pepper, chopped, this recipe delivers authentic, satisfying flavors. Combine squash, water and salt and cook until just barely tender.
Drain and set aside.
Saute onions and peppers in margarine until crisp-tender (about 3 minutes).
Combine vegetables, egg and next 5 ingredients.
Spoon into greased casserole or 9 x 13-inch pan.
Bake at 350Β° for 30 minutes.
