Squash Casserole is an moderately easy dinner. Made with summer squash, washed and sliced into about 1/4-inch slices crossways (enough for your family), 1 medium onion, minced, salt, pepper and garlic powder, 1/3 c. oleo and 2/3 c. shredded cheese of your choice, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cook until just tender (steam, boil or fry) the squash and onion.

Drain; season to taste with salt, pepper and garlic powder. Mix together remaining ingredients and add.

Pour into olive oiled baking dish.

Bake at 350Β° for 40 minutes or until browned and bubbly.

(Accumulated leftover veggies can be substituted for or included with the squash.)
