Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. squash, 1/2 c. chopped onion, 1 c. shredded carrots, 1 can cream of chicken soup and 1 (8 oz.) pkg. pepperidge farm cornbread stuffing mix, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook squash and onion until tender and drain.
Melt margarine and mix with stuffing.
Place half of stuffing in bottom of long casserole dish.
Reserve remaining half.
Mix carrots, soup and sour cream with squash and onion.
Put on top of stuffing mix. Now, spread the rest of the stuffing mix on top.
Bake at 350Β° for 30 to 40 minutes or until golden brown.
