Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 1 qt. fresh squash, cooked, or 2 cans with chopped onion (as desired), salt and pepper (as desired), 2 eggs, beaten, 1/2 c. bread crumbs or 18 crumbled ritz or town house crackers and 1/2 stick melted margarine, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Mix all ingredients well and pour into baking dish (spray with Pam).
Top with additional cracker crumbs mixed with melted margarine.
Use as many crackers and margarine as necessary to cover casserole well.
