Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, 1 c. shredded carrot, 1 c. sour cream, 1 (8 oz.) pkg. stuffing mix and 1/4 c. chopped onion, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Slice squash; cook squash and onion in salted water until tender.
Drain.
Combine cream of chicken soup and sour cream. Add drained squash and carrot.
Do not mash squash.
Combine stuffing mix and margarine.
Spread 1/2 stuffing on bottom of 12 x 7-inch baking dish.
Spoon squash mixture on top.
Sprinkle remainder of stuffing over squash mixture.
Bake for 30 minutes in a 350Β° oven.
