Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. yellow squash, sliced (6 c.), 1/4 c. chopped onions, 1 can condensed cream of chicken soup, 1 c. dairy sour cream and 1 c. shredded carrots, this recipe delivers authentic, satisfying flavors. In a saucepan, cook sliced squash and chopped onions in boiling water for 5 minutes; drain.
Combine cream of chicken soup and sour cream with carrots; fold in drained squash and onions. Combine stuffing mix and melted butter.
Spread half of stuffing mixture in bottom of oblong baking dish.
Spoon vegetable mixture on top.
Sprinkle remaining stuffing mix over vegetables.
Bake at 350Β° for 25 to 30 minutes.
