Squash Boats
Squash Boats is an moderately easy dinner. Made with 6 medium squash, 1 c. chicken broth, 2 tbsp. margarine, 1 small onion, chopped and 1/2 c. cheddar cheese, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Boil squash in chicken broth until tender.
Saute onions in margarine.
Cut squash in half.
Scoop out of boats and add onion. Add bouillon and seasonings and cook for 5 minutes.
Add cheese and cracker crumbs.
Reserve enough cheese to top each boat.
Fill boats with mixture and top with cheese.
Bake at 400Β° for 10 minutes.
