Springtime Soup
Springtime Soup is an moderately easy dinner. Made with 2 chopped leeks, 1 chopped onion, 2 tbsp. butter, 1 1/2 qt. hot water and 2 potatoes, sliced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
π¨βπ³ Instructions
Saute leeks and onion in butter; add water, potatoes, carrots and salt.
Simmer for 15 minutes.
Add rice and asparagus.
Simmer for 25 minutes.
Add spinach and simmer for 10 minutes.
Stir in cream and bring almost to a boil.
Flavor improves if made ahead of time.
Heat to serve.
Do not boil.
