Springtime Potatoes
Springtime Potatoes is an moderately easy dinner. Made with 1 1/2 lb. small new potatoes, 1/2 c. chopped, seeded cucumbers (not peeled), 1/2 c. sliced radishes, 1 tbsp. milk and dash of hot pepper sauce, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Scrub potatoes, don't peel.
Any large potatoes.
(Mature potatoes work just as well.)
Cook potatoes in salted water until tender; drain. In a saucepan, combine dip, cucumber, radishes, milk, salt, pepper and hot pepper sauce. Pour prepared sauce over potatoes in serving dish.
