Spring Surprise Pudding
Spring Surprise Pudding is an moderately easy dinner. Made with 3 c. rhubarb, cut, 1/4 c. water, 1 c. sugar, 1 c. flour and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Rhubarb saucepan and cook until tender, about or 15 minutes.
Add 1 cup sugar.
Simmer 10 minutes longer.
Sift together flour, baking powder and salt. Cream together shortening and sugar.
Add grated orange rind and egg and beat until light and fluffy.
Add vanilla to milk and add creamed mixture alternately with flour mixture. Stir until smooth.
Pour batter into greased 8 x 8-inch square pan. Pour bubbling hot rhubarb sauce over the batter. Bake at 350Β° for about 45 minutes.
Serve with whipped topping. Serves 6.
