Spring Sunshine Pie
Spring Sunshine Pie is an moderately easy dinner. Made with 1/2 c. cold water, 7 tbsp. cornstarch, 1 1/2 c. hot water, 1 1/2 c. sugar and 3 egg yolks, slightly beaten, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Mix cold water and cornstarch until smooth.
Combine hot water and sugar and bring to a boil.
Add cornstarch mixture.
Cook until it begins to thicken.
Cook about 15 minutes, stirring constantly.

Add lemon juice. Cover and set aside.
