Spring Salad
Spring Salad is an moderately easy dinner. Made with 8 oz. green beans, trimmed, 1 c. celery, sliced, 1 lb. fresh spinach, torn into bite-size pieces, 1 medium green pepper, cut into rings and 1 medium yellow pepper, cut into rings, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Blanch green beans in boiling water for 5 minutes, until tender-crisp.
Rinse under cold water and drain.
Rinse spinach thoroughly and drain.
Tear into bite-size pieces.
In a large bowl, toss all ingredients together until well blended.
Makes 6 to 8 servings.
