Spoon Cornbread
Spoon Cornbread is an moderately easy dinner. Made with 4 heaping spoons cornmeal, 3 heaping spoons flour, 1 heaping spoon sugar, 1/2 c. oil and 2 eggs or egg beaters, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Preheat oven to 400°.
Using a large spoon as your measure, into a medium mixing bowl put cornmeal, flour and sugar, blending together.
In small bowl, whisk eggs together and pour in.
Add 3/4 cup buttermilk.
In a loaf pan or 9-inch cake pan, pour oil and swirl until pan bottom and sides are covered.
Pour the remaining oil into the bowl with the other ingredients.
Add more buttermilk until smooth pouring consistency is reached.
Pour into pan.
Bake at 400° for 30 minutes.
