Split Pea Soup
Split Pea Soup is an moderately easy dinner. Made with 1 lb. dry split peas, 2 1/2 qt. water, 6 ham hocks, 1 carrot, cut up and 2 to 4 green onions, cut up, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Rinse peas and boil with water and ham hocks.
Reduce heat to a slow boil; cover and cook 45 minutes.
Add to pot, cut up vegetables and seasonings.
Simmer for 2 hours.
After 2 hours, remove ham hocks and set them aside.
Place smoked sausage in soup and cook for 1/2 hour longer over low heat.
